  • 9 oz optional vegan beef or portobello mushrooms
  • 1 large onion (diced)
  • 3 large carrots (chunky pieces)
  • 2 ribs celery (diced)
  • 5 cloves garlic (minced)
  • 4 cups vegetable stock
  • 4 large potatoes (chunky pieces)
  • ¼ head green cabbage (shredded)
  • Soy sauce
  • Sea salt
  • Black pepper
  • Sugar
  • Bay leaves
  • Thyme
  • Rosemary

Instructions

  1. Heat oil in a large pot over high heat. Sear vegan beef or mushrooms until golden brown; set aside.
  2. Reduce heat to medium and sauté onions, carrots, and celery until softened; add garlic.
  3. Stir in flour and cook briefly to remove raw taste.
  4. Gradually add vegetable stock while stirring to avoid lumps.
  5. Mix in remaining vegetables and seasonings. Stir well.
  6. Bring to a boil then reduce heat; simmer uncovered for 45-50 minutes until potatoes are soft.
  7. Add back seared vegan beef or mushrooms in the last 10 minutes of cooking.
