  • 150 g vegan butter or coconut oil (melted)
  • 3 large apples (peeled and diced)
  • 50 g brown sugar
  • 260 g cashews (unsalted, preferably raw)
  • 250 g firm silken tofu
  • ½ cup maple syrup
  • 2 tbsp lemon juice
  • 70 g oats

Instructions

  1. Prepare the crust by grinding cookies into fine crumbs and mixing with melted vegan butter. Press firmly into a springform pan.
  2. In a saucepan, cook diced apples with brown sugar until softened.
  3. Combine oats, chopped nuts, flour, cinnamon, brown sugar, and melted butter for the crumble topping.
  4. Soak cashews for an hour, then blend with silken tofu, maple syrup, lemon juice, and vanilla extract until smooth.
  5. Layer half the cheesecake mixture over the crust, add spiced apples, top with remaining cheesecake mixture, and finish with crumble topping.
  6. Bake until golden and firm; chill in the fridge before serving.
