  • 5 ounces whole wheat French bread (cut into small cubes)
  • 1/2 medium onion (minced)
  • 1 large stalk celery (minced)
  • 4 fresh sage leaves (minced)
  • 1/4 cup chopped parsley
  • 3/4 cups chicken broth
  • 2 tablespoons dried cranberries (chopped)
  • Kosher salt and black pepper

Instructions

  1. Preheat your oven to 375°F (190°C). Lay the turkey breast flat and season generously with kosher salt.
  2. In a skillet, melt butter over medium heat. Add onions and celery; cook until soft. Stir in sage, parsley, poultry seasoning, salt, and pepper.
  3. In a bowl, combine the sautéed mixture with bread cubes, beaten egg, broth, and cranberries.
  4. Spread the stuffing over the turkey breast and roll tightly. Secure with cooking twine.
  5. Place seam-side down in a roasting pan. Dot with butter and add broth to the pan. Cover loosely with foil and bake for about 60 minutes or until internal temperature reaches 165°F (74°C).
  6. Allow to rest before slicing.
