  • 1/4 teaspoon ground nutmeg
  • 1 1/2 cups shredded sharp cheddar cheese, plus more for topping
  • 1/2 cup grated Parmesan cheese

Instructions

  1. Bring a large pot of salted water to boil. Add cauliflower florets and cook for about 5-6 minutes until tender but still firm. Drain and set aside.
  2. In a saucepan over medium heat, melt butter. Whisk in flour to create a roux and cook for about 1 minute.
  3. Gradually add warmed milk while stirring constantly until thickened (about 4-5 minutes).
  4. Stir in Dijon mustard (if using), nutmeg, salt, and pepper. Mix in cheddar and Parmesan cheese until melted.
  5. Preheat oven to 400°F (200°C). Place cauliflower in a baking dish and pour cheese sauce over it. Top with additional cheddar.
