  • ½ pound turkey strips (cut into small dice)
  • 3 medium shallots (thinly sliced)
  • 1 teaspoon Dijon mustard
  • 16 ounces frozen peas
  • 1 ripe pear (diced)
  • 1 lemon (zested and juiced)
  • ½ cup parsley (roughly chopped)
  • Freshly ground black pepper (to taste)

Instructions

  1. Peel, slice, and dice the pear; toss with lemon juice to prevent browning.
  2. Heat a large skillet over medium heat, cook turkey strips until golden brown. Set aside on a paper towel-lined plate to drain.
  3. In the same skillet, add shallots and sauté until softened; stir in Dijon mustard.
  4. Add frozen peas and diced pears; cook for about five minutes until heated through.
  5. Turn off heat and fold in half of the turkey strips, parsley, and black pepper.
  6. Serve in a large bowl topped with remaining turkey strips and garnished with lemon zest.
