  • 2 tablespoons sesame seeds
  • 3 tablespoons soy sauce
  • 3 tablespoons lime juice
  • 1 tablespoon honey (or maple syrup)
  • 1 tablespoon sesame oil
  • 1 teaspoon fresh ginger, grated
  • 1 clove garlic, minced
  • Salt and pepper, to taste

Instructions

  1. Rinse and cook quinoa according to package instructions; allow to cool.
  2. In a large bowl, combine cooked quinoa with bell pepper, cucumber, carrots, green onions, cilantro, peanuts (or sunflower seeds).
  3. Whisk together the dressing ingredients in a separate bowl until well combined.
