  • 1 Tablespoon sesame oil
  • ¼ cup onion (diced – yellow or white)
  • 2 cloves of garlic
  • 1 tablespoon fresh minced ginger (or ginger paste)
  • 10 oz ground chicken
  • ¼ cup Tamari or soy sauce
  • 2 Tablespoon Thai sweet red chili sauce
  • Juice of 1 lime
  • 1 teaspoon maple syrup
  • ⅓ cup cashews (chopped – raw or roasted/salted)
  • ¼ cup scallions (chopped)
  • ¼ cup cilantro (fresh, chopped)
  • ¼½ cup carrots (shredded)
  • Sesame seeds for topping
  • 1 head butter lettuce – leaves removed (rinsed and dried)

Instructions

  1. Heat sesame oil in a medium pan over medium-high heat. Add diced onion and sauté until translucent, about 2-3 minutes.
  2. Stir in minced garlic and ginger; cook for another 2 minutes until fragrant.
  3. Add ground chicken to the pan, breaking it apart with a wooden spoon. Season lightly with salt and pepper, cooking until golden brown (3-4 minutes).
  4. In a small bowl, mix Tamari (or soy sauce), Thai sweet chili sauce, lime juice, and maple syrup.
  5. Once chicken is cooked, add chopped cashews and pour the sauce over the mixture. Stir well and simmer on low heat for about 2 more minutes.
  6. Remove from heat and fold in shredded carrots, scallions, and cilantro.
  7. Serve by placing a spoonful of the chicken mixture into each butter lettuce leaf.
