  • 1/2 cup pure maple syrup
  • 1/2 cup unsweetened applesauce
  • 3 cups old-fashioned whole oats
  • 1 teaspoon baking powder
  • 1 and 1/2 teaspoons cinnamon powder
  • 1/4 teaspoon nutmeg powder
  • 1/4 teaspoon salt
  • 1 generous cup chopped peeled apple (120g)
  • Optional: 1/2 cup chopped walnuts or pecans (50g)
  • Optional: coarse sugar for sprinkling

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a large bowl, whisk together milk, eggs, maple syrup, applesauce, and vanilla essence until well combined.
  3. In another bowl, mix oats, baking powder, cinnamon, nutmeg, and salt.
  4. Gradually combine the dry mixture into the wet mixture while stirring; fold in chopped apples gently.
  5. Grease a muffin tin or line with paper liners; fill each cup about three-quarters full with the batter.
  6. Bake for approximately 28 minutes until golden brown and set in the center.
  7. Let cool for a few minutes before transferring them to a wire rack.
