  • 4 Cornish game hens
  • 2 tablespoons olive oil
  • Salt and pepper, to taste
  • 2 teaspoons garlic powder
  • 2 teaspoons dried thyme
  • 1 teaspoon paprika
  • 1 cup bread crumbs
  • 1/2 cup onion, finely chopped
  • 1/2 cup celery, finely chopped
  • 1/2 cup carrots, finely chopped
  • 1/4 cup raisins or dried cranberries (optional)
  • 1/4 cup chopped pecans or walnuts (optional)
  • 2 tablespoons fresh parsley, chopped
  • 1/4 cup chicken broth
  • 2 tablespoons butter, melted
  • 1/4 cup white grape juice or apple juice

Instructions

  1. Preheat your oven to 375°F (190°C). Rinse and pat dry the Cornish game hens.
  2. Drizzle olive oil over each hen and season with salt, pepper, garlic powder, dried thyme, and paprika.
  3. In a bowl, combine bread crumbs, chopped onion, celery, carrots, optional nuts and dried fruit, parsley, chicken broth, and melted butter until well mixed.
  4. Stuff the hens lightly with the mixture and place them in a roasting pan. Pour white grape or apple juice over the hens.
  5. Roast for about 1 hour and 10 minutes or until the internal temperature reaches 165°F (75°C), basting every 20 minutes.
  6. Let rest for 10 minutes before serving.
