  • 1 lb vanilla cream cookies
  • 6 tablespoons melted butter
  • 1 small box (3.3 oz) strawberry vegan gelatin
  • 1 cup boiling water
  • 16 oz softened cream cheese
  • 3/4 cup granulated sugar
  • 2 cups heavy whipping cream
  • 1/2 cup powdered sugar
  • 10 strawberry wafer cookies

Instructions

  1. Prepare the crust by processing 26 vanilla cream cookies into fine crumbs and mixing them with melted butter. Press into the bottom of a greased springform pan and freeze for 15 minutes.
  2. Dissolve the strawberry vegan gelatin in boiling water; set aside to cool.
  3. Beat softened cream cheese and granulated sugar until smooth; set aside.
  4. Whip heavy cream with powdered sugar until stiff peaks form.
  5. Fold half the whipped cream and half the cooled gelatin into the cream cheese mixture gently until smooth.
  6. Pour half the strawberry mixture over the crust, freeze for another 15 minutes, then add the cream cheese layer followed by the remaining strawberry mixture.
  7. Crush remaining cookies and sprinkle on top before refrigerating for at least four hours or overnight.
  8. Decorate with whipped topping before serving.
