  • 2 ribeye or sirloin steaks (8 oz each)
  • 2 tablespoons olive oil
  • Salt and pepper, to taste
  • 1/2 cup fresh parsley, packed
  • 1/4 cup fresh cilantro
  • 1 tablespoon fresh oregano (or basil)
  • 2 large sweet potatoes, peeled and cut into chunks
  • 1/4 cup unsalted butter (or olive oil for dairy-free)
  • 1/2 cup heavy cream or coconut milk for dairy-free
  • 2 tablespoons fresh lemon juice
  • 1/4 cup extra virgin olive oil
  • 2 tablespoons apple vinegar (or apple cider vinegar)
  • 2 cloves garlic, minced
  • 1/2 teaspoon chili flakes (optional)
  • 1/4 teaspoon cinnamon (optional)

Instructions

  1. Peel and chop sweet potatoes into chunks. Boil in salted water until tender, about 15-20 minutes.
  2. In a blender, combine parsley, cilantro, oregano (or basil), lemon juice, olive oil, apple vinegar, garlic, chili flakes (optional), salt, and pepper. Blend until smooth.
  3. Season steaks with salt, pepper, and garlic powder if desired. Heat olive oil in a skillet over medium-high heat and cook steaks for about 4-5 minutes per side for medium-rare.
  4. After draining the sweet potatoes, return them to the pot and add butter (or olive oil), cream (or coconut milk), salt, pepper, and cinnamon if desired. Mash until smooth.
  5. Serve steaks alongside fluffy mashed sweet potatoes topped with the vibrant green sauce.
