  • 4 large bell peppers
  • 1 tbsp olive oil
  • 1 medium yellow onion
  • 34 cloves garlic
  • 10 oz frozen chopped spinach
  • 15 oz whole milk ricotta cheese
  • 1 large egg
  • ½ cup grated Parmesan cheese
  • ¼ cup plain breadcrumbs (optional)
  • 1 tsp dried Italian seasoning
  • Salt and black pepper to taste

Instructions

  1. Preheat the oven to 375°F (190°C). Halve the bell peppers lengthwise and remove seeds.
  2. In a skillet over medium heat, warm olive oil. Sauté chopped onion until soft, then add minced garlic.
  3. In a bowl, mix drained spinach, ricotta cheese, beaten egg, Parmesan cheese, breadcrumbs (if using), Italian seasoning, salt, and black pepper until well combined.
  4. Spoon the filling into each pepper half. Optionally spread marinara sauce in the baking dish before placing the peppers inside.
  5. Bake covered with foil for 25 minutes; then uncover and sprinkle extra Parmesan on top before baking for another 10 minutes until golden.
