  • 8 thick slices of sourdough bread
  • 3 balls fresh mozzarella (125g each), sliced thin and dried
  • 8 sun-dried tomatoes, dried and chopped
  • 4 tablespoons pesto
  • Butter, as required

Instructions

  1. Prepare your ingredients by slicing the mozzarella and chopping the sun-dried tomatoes.
  2. Assemble the sandwich by spreading butter on one side of each slice of sourdough. On the unbuttered side, layer mozzarella, sun-dried tomatoes, and pesto before topping with another slice of bread (buttered side out).
