  • ½ cup whole milk
  • ¼ cup olive oil
  • 2 tbsp plain Greek yogurt
  • 1 ½ cups all-purpose flour
  • 1 ½ tsp baking powder
  • ¾ cup shredded mozzarella cheese
  • ⅓ cup chopped sun-dried tomatoes (drained)
  • ¼ cup chopped fresh basil
  • ½ tsp salt
  • ¼ tsp garlic powder

Instructions

  1. Preheat oven to 350°F (175°C) and grease an 8×4-inch loaf pan.
  2. In a bowl, whisk together eggs, milk, olive oil, and yogurt until smooth.
  3. In another bowl, combine flour, baking powder, salt, and garlic powder.
  4. Gently fold dry ingredients into wet mixture until just combined. Stir in mozzarella, sun-dried tomatoes, and basil.
  5. Pour batter into the prepared pan and bake for 40-45 minutes until golden brown and a toothpick comes out clean.
  6. Cool in the pan for 10 minutes before transferring to a wire rack. Slice and enjoy warm or at room temperature.
