  • 1/2 cup breadcrumbs
  • 1/4 cup grated Parmesan cheese
  • 1 egg
  • 2 cloves garlic, minced
  • 1 teaspoon Italian seasoning
  • Salt and pepper to taste
  • 2 tablespoons olive oil
  • 1 onion, chopped
  • 4 cups chicken broth
  • 1 cup heavy cream
  • 2 cups fresh spinach
  • 1 cup diced tomatoes
  • Fresh basil for garnish

Instructions

  1. In a large bowl, mix ground beef, breadcrumbs, Parmesan cheese, egg, garlic, Italian seasoning, salt, and pepper until combined. Form into small meatballs.
  2. Heat olive oil in a pot over medium heat and brown the meatballs for about 5 minutes. Remove and set aside.
  3. Sauté chopped onion in the same pot until translucent (about 3-4 minutes).
  4. Add chicken broth; bring to a boil then reduce to simmer.
  5. Return meatballs to the pot and simmer for 15 minutes.
  6. Stir in heavy cream and fresh spinach; cook until spinach wilts.
  7. Serve garnished with fresh basil.
