  • 2 acorn squash
  • ½ pound ground turkey
  • 1 tablespoon olive oil
  • ½ large onion (diced)
  • 3 cups kale (chopped)
  • 1 tablespoon garlic (minced)
  • 2 stalks celery (chopped)
  • ½ large apple (chopped)
  • ½ teaspoon fresh minced thyme
  • 2 sage leaves (minced)
  • 1 teaspoon minced fresh rosemary
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • 2 tablespoons walnuts or pecans
  • ½ cup crumbled feta cheese

Instructions

  1. Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
  2. Halve the acorn squash and scoop out the seeds. Place cut side down on the baking sheet.
  3. Bake the squash for about 20 minutes until fork-tender.
  4. In a skillet over medium heat, cook ground turkey until browned.
  5. Add olive oil, onions, kale, garlic, celery, apples, and herbs to the skillet; sauté until softened.
  6. Scoop some flesh from the baked squash and mix it into the filling.
  7. Stuff each squash half generously with the mixture.
  8. Return to the oven for another 15 minutes; top with feta cheese and nuts before baking for an additional 5 minutes.
