Ingredients

Scale
  • 8 ounces fettuccine or linguine
  • 2 tablespoons olive oil
  • 2 cloves garlic, minced
  • 1 pound fresh salmon fillet, skin removed
  • 4 cups fresh spinach, washed and roughly chopped
  • 1 cup heavy cream
  • 1/2 cup grated Parmesan cheese
  • 1 teaspoon lemon zest
  • 2 tablespoons fresh lemon juice
  • Salt and pepper to taste
  • 1/4 teaspoon red pepper flakes (optional)
  • Fresh parsley, chopped (for garnish)

Instructions

  1. Cook the pasta in salted boiling water until al dente (8-10 minutes).
  2. Season salmon with salt, pepper, and lemon juice. In a skillet over medium heat, cook salmon in olive oil for about 4-5 minutes per side until fully cooked. Remove and flake.
  3. In the same skillet, sauté garlic for 30 seconds, then add spinach and cook until wilted (2-3 minutes).
  4. Lower the heat and stir in heavy cream; gradually add Parmesan cheese until melted.
  5. Combine drained pasta and flaked salmon into the skillet; toss gently to coat.
  6. Adjust sauce thickness with reserved pasta water as needed; serve garnished with parsley.
