  • 1 head garlic
  • 1 tsp olive oil
  • 2 pounds red potatoes (washed and cut into quarters)
  • kosher salt
  • 6 tablespoons butter
  • 3/4 cup half-and-half
  • fresh ground pepper

Instructions

  1. Preheat your oven to 375°F (190°C). Cut off the top of the garlic head, drizzle with olive oil, wrap in foil, and roast for about 1 hour until soft.
  2. Place the quartered potatoes in a pot and cover with cold water. Add salt and bring to a boil. Cook for about 15 minutes until fork-tender.
  3. Drain the potatoes and return them to the pot. Squeeze out the roasted garlic cloves into the potatoes.
  4. In a separate container, warm together half-and-half and butter until melted. Pour into the potato mixture along with salt and pepper to taste. Mash until creamy.
  5. Serve warm, garnished with fresh herbs or a pat of butter if desired.
