  • 2 lbs Red potatoes
  • 1 head roasted garlic (1215 cloves)
  • ¼ cup salted butter
  • ½ cup vegetable or chicken broth
  • ½ cup heavy cream
  • 1 teaspoon fresh thyme
  • 1 ½ teaspoon salt
  • 1 teaspoon black pepper
  • 1 tablespoon chopped parsley

Instructions

  1. Spray the inside of a three-quart slow cooker with cooking spray.
  2. Add chopped red potatoes, roasted garlic cloves, thyme, butter, salt, pepper, and broth. Mix gently.
  3. Cover and cook on high for 4-5 hours or low for 7-8 hours.
  4. Once cooked, add heavy cream to reach desired creaminess.
  5. Mash using a hand mixer or potato masher until smooth. Adjust seasoning if needed.
