  • 1 tsp olive oil
  • 2 pounds red potatoes (washed and cut into quarters)
  • Kosher salt
  • 6 tablespoons butter
  • 3/4 cup half-and-half

Instructions

  1. Preheat your oven to 375°F. Cut off the top quarter of the garlic head, drizzle with olive oil, wrap in foil, and roast for about an hour.
  2. In a large pot, cover the quartered red potatoes with cold water and add 1 tsp of kosher salt. Bring to a boil and simmer until fork-tender, approximately 15 minutes.
  3. Drain the potatoes and return them to the pot. Squeeze out the roasted garlic cloves from their skins.
  4. Warm the half-and-half and butter until melted, then mix into the potatoes along with salt and pepper. Mash until creamy yet slightly lumpy.
