  • 1 bunch asparagus, trimmed
  • 1 bunch radishes, trimmed and halved
  • 2 tbsp olive oil
  • Salt and pepper to taste
  • 2 tbsp whole grain mustard
  • 1 tbsp Dijon mustard
  • 2 tbsp red apple vinegar
  • 1 garlic clove, minced
  • 1/4 cup olive oil (for vinaigrette)
  • Optional: 1 tsp honey

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. On a baking sheet, combine trimmed asparagus and halved radishes. Drizzle with olive oil and season with salt and pepper. Toss until evenly coated.
  3. Roast for 20–25 minutes, turning halfway through until tender yet slightly crisp.
  4. While roasting, whisk together whole grain mustard, Dijon mustard, red apple vinegar, minced garlic, olive oil, and honey (if using) in a bowl.
  5. Adjust seasoning in the vinaigrette with salt and pepper as desired.
  6. Once vegetables are roasted, arrange them on a platter and drizzle with the mustard vinaigrette before serving.
