  • ¼ Cup granulated sugar
  • ½ Cup pumpkin puree
  • 1 large egg
  • 1 Teaspoon vanilla extract
  • 2 ¼ Cups all-purpose flour
  • 1 Teaspoon baking soda
  • 1 Teaspoon pumpkin pie spice
  • ½ Teaspoon salt
  • 1 Cup chocolate chips
  • 1 Cup mini vegan marshmallows
  • 8 graham crackers (broken into small pieces)
  • 1 Teaspoon food coloring (orange, optional)

Instructions

  1. Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a large bowl, cream together softened butter, brown sugar, and granulated sugar until light and fluffy.
  3. Mix in pumpkin puree, egg, and vanilla extract until well combined.
  4. In another bowl, whisk together flour, baking soda, pumpkin pie spice, and salt before gradually adding to the wet mixture.
  5. Gently fold in chocolate chips, mini vegan marshmallows, and broken graham crackers.
  6. Drop rounded tablespoons of dough onto the prepared baking sheet, leaving space between each cookie.
  7. Press extra marshmallows and chocolate chips on top before baking for 12 to 14 minutes until golden at the edges.
  8. Let cool briefly before transferring to a wire rack.
