  • 1/2 cup granulated sugar (for topping)
  • 1 teaspoon cinnamon (for topping)
  • 1 tablespoon unsalted butter, melted (for topping)
  • 3/4 cup heavy cream (for filling)
  • 8 ounces cream cheese, softened (for filling)
  • 1/4 cup maple syrup (to taste) (for filling)

Instructions

  1. Preheat your oven to 350°F (175°C). In a large bowl, whisk together vegetable oil, granulated sugar, and brown sugar until combined.
  2. Add pumpkin puree, eggs, vanilla extract, and milk; whisk until just combined.
  3. In another bowl, mix all-purpose flour, baking soda, spices, and salt. Gently fold into the wet mixture until just combined—avoid overmixing.
  4. Grease a muffin tin and pour batter into each cup until about 3/4 full.
  5. For the topping, mix granulated sugar and cinnamon; sprinkle over muffins before baking.
