  • 4 mini pumpkins or 6 ramekins
  • 2 cups heavy cream
  • 1/3 cup granulated sugar (plus extra for topping)
  • 4 large egg yolks
  • 1 tsp vanilla extract
  • 1 cup pumpkin puree
  • 1/2 tsp ground cinnamon
  • 1/2 tsp ground ginger
  • 1/4 tsp salt

Instructions

  1. Preheat your oven to 325°F (165°C). If using mini pumpkins, cut off the tops and scoop out the seeds.
  2. In a mixing bowl, whisk together heavy cream, sugar, egg yolks, vanilla extract, pumpkin puree, ground cinnamon, ground ginger, and salt until smooth.
  3. Pour the custard mixture into the prepared pumpkins or ramekins, filling them slightly below the rim.
  4. Place the containers in a baking dish filled with hot water (water bath) and bake for about 30 minutes until set but still jiggly.
  5. Once cooled to room temperature, refrigerate for at least two hours before serving. When ready to serve, sprinkle sugar on top and caramelize using a kitchen torch.
