  • ¾ cup granulated sugar
  • ¾ cup unsalted butter (softened)
  • 1 teaspoon clear vanilla extract
  • 1 egg (room temperature)
  • 1 cup white chocolate chips
  • ½ cup chopped pistachios

  1. Preheat your oven to 325°F (165°C). Line a baking sheet with parchment paper.
  2. In a bowl, whisk together flour, pudding mix, baking soda, and salt.
  3. In another bowl, cream together brown sugar, granulated sugar, and softened butter until light and fluffy.
  4. Add the egg and vanilla extract to the butter mixture; beat until well combined.
  5. Gradually mix dry ingredients into the wet mixture until fully incorporated.
  6. Fold in white chocolate chips and chopped pistachios gently.
  7. Chill dough for at least 30 minutes in the refrigerator.
