  • 1 tbsp Olive Oil
  • ¼ cup Basil Pesto
  • 1 cup Diced Tomatoes
  • 4 slices Mozzarella Cheese
  • Balsamic Glaze

Instructions

  1. In a bowl, mix diced tomatoes, sliced basil leaves, grated garlic, olive oil, red pepper flakes, salt, and pepper to create the bruschetta topping. Set aside.
  2. Rub chicken breasts with olive oil and season with garlic powder, Italian seasoning, salt, and pepper.
  3. Heat a skillet over medium-high heat and cook the chicken for 5-7 minutes on each side until golden brown and cooked through. Squeeze lemon juice over the chicken halfway through.
  4. Top each chicken breast with mozzarella cheese and cover the skillet to melt the cheese.
