  • 2 eggs
  • ¾ cup creamy peanut butter
  • 2 cups all-purpose flour
  • ½ teaspoon baking soda
  • ½ teaspoon salt
  • 1 cup chopped strawberries
  • ½ cup strawberry jam
  • ¼ cup brown sugar (packed)
  • ¼ cup all-purpose flour
  • ¼ cup crushed peanuts
  • 3 tablespoons butter (melted)

Instructions

  1. Preheat oven to 350°F and grease a 9×5 inch loaf pan.
  2. In a small bowl, mix together brown sugar, flour, and crushed peanuts; add melted butter until crumbly. Refrigerate.
  3. In a large bowl, whisk together brown sugar, milk, eggs, and peanut butter until smooth.
  4. Gently fold in flour, baking soda, salt; then add strawberries.
  5. Swirl in strawberry jam gently.
  6. Pour batter into the prepared pan; sprinkle with reserved streusel.
  7. Bake for 60-75 minutes or until a toothpick comes out clean.
