Ingredients

Scale
  • 1 ½ cups all-purpose flour
  • 1 teaspoon baking powder
  • ½ teaspoon baking soda
  • ¼ teaspoon salt
  • ½ cup unsalted butter, softened
  • ½ cup granulated sugar
  • ¼ cup brown sugar, packed
  • 2 large eggs
  • ½ cup sour cream or plain Greek yogurt
  • 1 teaspoon vanilla extract
  • 1 ½ cups diced peaches (fresh, canned, or thawed frozen)
  • ½ cup all-purpose flour (for streusel)
  • ⅓ cup brown sugar (for streusel)
  • ½ teaspoon ground cinnamon (for streusel)
  • ¼ cup cold unsalted butter, cut into small cubes (for streusel)
  • ½ cup powdered sugar (for optional glaze)
  • 12 tablespoons milk or cream (for optional glaze)
  • ¼ teaspoon vanilla extract (for optional glaze)

Instructions

  1. Preheat your oven to 350°F (175°C) and grease an 8×8 or 9×9-inch square baking pan.
  2. Prepare the streusel topping by combining flour, brown sugar, and cinnamon in a small bowl. Mix in cold butter cubes until crumbly. Refrigerate while preparing the batter.
  3. In another bowl, whisk together flour, baking powder, baking soda, and salt.
  4. In a large mixing bowl, cream together softened butter with granulated and brown sugars until fluffy.
  5. Beat in eggs one at a time, then stir in vanilla extract and sour cream until smooth.
  6. Gradually mix the dry ingredients into the wet mixture until just combined.
  7. Gently fold in the diced peaches and spread the batter evenly in the prepared pan.
  8. Sprinkle the streusel topping over the batter without pressing it down.
  9. Bake for about 40–50 minutes or until a toothpick inserted comes out clean.
  10. Let cool for at least 15–20 minutes before slicing.
