  • 1 tbsp olive oil
  • 1 small onion, diced
  • 2 cloves garlic, minced
  • 14.5 oz can diced tomatoes, drained
  • 2 quarts chicken stock
  • ½ cup heavy cream
  • 1 cup ditalini pasta
  • ½ cup freshly grated Parmesan cheese
  • Salt and freshly cracked black pepper to taste
  • Fresh parsley, chopped (for garnish)

Instructions

  1. Heat olive oil in a large pot over medium heat. Brown the chicken sausage until cooked through, then remove from the pot.
  2. Sauté the diced onion and minced garlic in the same pot until softened.
  3. Stir in the drained tomatoes, chicken stock, basil, oregano, and browned sausage. Simmer gently for about 10 minutes.
  4. Add ditalini pasta and cook until al dente (8–10 minutes).
