  • 1 whole chicken (35 lbs), giblets removed
  • 1 medium onion, peeled and halved
  • 2 tablespoons avocado oil (or olive oil)
  • 1 ½ teaspoons salt
  • 1 teaspoon smoked paprika
  • ½ teaspoon onion powder
  • ½ teaspoon dried thyme
  • ½ teaspoon garlic powder
  • ½ teaspoon ground black pepper

Instructions

  1. Allow the chicken to rest at room temperature for 30-60 minutes.
  2. Preheat your oven to 425ºF (218ºC).
  3. Pat the chicken dry and place it breast side up in a roasting pan. Stuff the cavity with onion halves.
  4. In a bowl, mix avocado oil, salt, smoked paprika, onion powder, thyme, garlic powder, and black pepper to create a paste.
  5. Brush the seasoned oil all over the chicken.
  6. Roast for about 70-90 minutes until the internal temperature reaches at least 165ºF (74ºC). Avoid basting during the last 20 minutes for extra crispiness.
  7. Let it rest for five minutes before carving and serving.
