  • 8 oz crumbled feta cheese
  • 1 cup ricotta cheese
  • 1 tsp fresh thyme leaves (optional)
  • 6 sheets phyllo pastry
  • ¼ cup melted butter or olive oil
  • ¼ cup honey
  • ½ tsp red chili flakes

Instructions

  1. In a bowl, mix crumbled feta and ricotta until smooth. Add thyme if desired.
  2. Preheat oven to 400°F (200°C). Cut phyllo sheets lengthwise into strips.
  3. Brush each strip with melted butter or olive oil, place a tablespoon of cheese mixture at one end, fold sides in, and roll tightly.
  4. Arrange rolls seam-side down on a parchment-lined baking sheet. Brush tops again with butter/oil.
  5. Bake for 15-20 minutes until golden brown and crispy.
  6. For the chili honey drizzle, warm honey and stir in red chili flakes before serving.
