- 4 skinless salmon fillets
- 1 tsp salt (divided)
- 1 tsp coarsely ground black pepper (divided)
- 1 tsp sweet paprika
- 1 tsp garlic powder
- 1 tbsp olive oil
- 1 tsp unsalted butter
- 1 yellow onion (finely chopped)
- 3 garlic cloves (minced)
- 1 cup dry orzo pasta
- 1 tsp dried thyme
- 3 cups low sodium chicken broth
- 5 ounces baby spinach
- juice from ½ lemon
- ½ cup grated Parmesan
- freshly ground black pepper (for serving)
- chili flakes (for serving)
- Prepare all ingredients: chop onion, mince garlic, and season the salmon fillets.
- Heat olive oil and butter in a skillet over medium-high heat; sear salmon for 3–4 minutes on each side. Remove from skillet.
- Sauté onion and garlic until soft.
- Add thyme, remaining salt and pepper; stir in orzo for a minute.
- Pour in chicken broth; simmer until orzo absorbs liquid (about 8 minutes).
- Stir in spinach until wilted; mix in lemon juice and Parmesan.
- Return salmon to skillet; simmer for another couple of minutes until heated through.
- Serve warm, garnished with black pepper and chili flakes if desired.
