  • 14 oz turkey or chicken sausage, sliced into ¼-inch rounds
  • 2 cloves garlic, minced
  • 3 cups elbow macaroni
  • 3½ cups chicken broth
  • 1 cup whole milk
  • 1 teaspoon smoked paprika
  • ½ teaspoon black pepper
  • ½ teaspoon salt (to taste)
  • 2 cups shredded sharp cheddar cheese
  • ½ cup shredded mozzarella cheese
  • 2 tablespoons unsalted butter

Instructions

  1. In a large pot, heat olive oil over medium heat. Add sausage slices and cook until browned (4-5 minutes). Remove from pot and set aside.
  2. In the same pot, sauté minced garlic for about 30 seconds until fragrant.
  3. Add elbow macaroni, chicken broth, milk, smoked paprika, black pepper, and salt. Stir to combine and bring to a gentle boil. Cover and simmer for 8-10 minutes until pasta is tender.
  4. Reduce heat to low and stir in shredded cheeses and butter until melted and creamy.
  5. Return the browned sausage to the pot and mix thoroughly until heated through.
