  • 1 lb chicken sausage, sliced into rounds
  • 1 cup long-grain white rice
  • 2 cups chicken broth
  • 1/2 cup BBQ sauce
  • 1 small onion, diced
  • 1 bell pepper, diced
  • 2 cloves garlic, minced
  • 1 tablespoon olive oil
  • 1 teaspoon smoked paprika
  • 1/2 teaspoon black pepper
  • Salt, to taste
  • Fresh parsley, chopped (for garnish)

Instructions

  1. In a large skillet, heat olive oil over medium heat. Add chicken sausage and cook until browned (4–5 minutes). Remove and set aside.
  2. In the same skillet, sauté onion and bell pepper until soft (3–4 minutes), then add garlic and cook for another 30 seconds.
  3. Stir in smoked paprika and black pepper; toast uncooked rice for 1–2 minutes.
  4. Pour in chicken broth and BBQ sauce; mix well. Return sausage to the pan.
  5. Bring to a boil, cover with a lid, reduce heat to low, and simmer for about 20–22 minutes until rice is tender.
  6. Let rest off heat for 5 minutes. Fluff with a fork and garnish with fresh parsley before serving.
