  • 1.5 pounds peeled and deveined shrimp
  • 4 cups low-sodium chicken broth
  • ½ cup white apple vinegar (optional)
  • 1 medium yellow onion, diced
  • 4 cloves garlic, minced
  • 1 cup grated Parmesan cheese
  • ½ cup heavy cream
  • 2 tablespoons butter
  • 2 tablespoons olive oil
  • Juice and zest of 1 lemon
  • Fresh parsley, chopped
  • Salt and black pepper to taste

Instructions

  1. In a large skillet over medium heat, combine olive oil and butter. Sauté diced onion until softened, about 5 minutes. Add minced garlic and red pepper flakes; cook for another minute.
  2. Stir in orzo pasta and toast for 1–2 minutes. If using, add white apple vinegar and let simmer briefly.
  3. Pour in chicken broth along with lemon zest, salt, and pepper. Bring to a boil, then reduce heat to low. Cover and simmer for 10–12 minutes until most liquid is absorbed.
  4. Add shrimp to the pan and cover again; cook for an additional 3–5 minutes until shrimp are pink.
  5. Remove from heat; stir in grated Parmesan cheese and heavy cream until combined.
  6. Finish with lemon juice and chopped parsley; serve hot with extra Parmesan if desired.
