  • 4 garlic cloves, rough chopped
  • 1 lb cremini mushrooms, sliced
  • 1/2 teaspoon salt
  • 1 tablespoon fresh rosemary, chopped
  • 1/4 cup apple juice or apple vinegar
  • 5 tablespoons flour (or gluten-free flour)
  • 3 cups hot vegetable broth
  • 3/4 cup sour cream or vegan sour cream

Instructions

  1. Heat olive oil in a large pot over medium-high heat. Sauté diced onion for 3-4 minutes until golden. Add garlic and sauté for another 2 minutes.
  2. Stir in sliced mushrooms, salt, and rosemary. Cook for about 10-12 minutes until mushrooms are tender.
  3. Sprinkle flour over the mixture while stirring for about 1-2 minutes. Gradually add hot vegetable broth while stirring until it reaches a simmering consistency.
  4. Stir in sour cream until fully incorporated. Adjust thickness with more broth if desired.
  5. Serve warm topped with crispy garlic chips and a drizzle of truffle oil.
