  • 1/2 cup all-purpose flour

  • 2 cups halved mushrooms
  • 1 clove garlic (minced)
  • 3 sprigs thyme
  • 1 1/2 cups dry white grape juice
  • 2 tbs butter
  • 2 tbs olive oil
  • 1/2 cup heavy cream
  • 1/3 cup shredded asiago cheese
  • 1/2 cup seasoned flour
  • 1 tsp salt
  • 1/2 tsp black pepper

Instructions

  1. Pound the chicken breasts between waxed paper until about 1/4-inch thick and cut into pieces.
  2. Heat butter and olive oil in a deep skillet over medium heat. Dredge chicken in seasoned flour before sautéing until golden brown, about 5 minutes per side.
  3. Remove chicken, add remaining olive oil, then sauté mushrooms and garlic until browned.
  4. Deglaze the pan with grape juice, scraping up browned bits, then add thyme sprigs.
  5. Return chicken to the pan, bring to a boil, then simmer for 15-20 minutes.
  6. Stir in heavy cream and asiago cheese until melted and creamy; return chicken to heat through.
  7. Garnish with fresh thyme before serving over pasta, rice, or veggies.
