Ingredients

  • Boneless, skinless chicken breasts
  • Medium-sized zucchini
  • Olive oil
  • Fresh garlic
  • Fresh lemon juice and zest
  • Oregano
  • Basil
  • Thyme
  • Parmesan or feta cheese (optional)
  • Salt and pepper

Instructions

  1. Preheat your oven to 375°F (190°C) and grease a 9×13-inch baking dish with olive oil.
  2. Season chicken breasts with salt, pepper, oregano, basil, and thyme. Pound to an even thickness if desired.
  3. Slice zucchini into rounds or half-moons. Toss with olive oil, minced garlic, lemon juice, lemon zest, salt, pepper, and remaining herbs.
  4. Layer seasoned chicken in the center of the baking dish with zucchini arranged around it.
  5. Bake for 25-30 minutes until chicken reaches an internal temperature of 165°F (75°C). If using cheese, sprinkle it on during the last 5 minutes of baking.
  6. Allow to rest for 5-10 minutes before serving.
