  • 1 medium onion, diced
  • 1 tablespoon garlic, minced
  • 1 cup baby spinach, chopped
  • 1/2 cup breadcrumbs
  • 1/4 cup Greek yogurt
  • 2 tablespoons fresh dill, finely chopped
  • 1 tablespoon fresh lemon juice
  • 1 teaspoon dried oregano
  • 1/2 teaspoon paprika
  • 1/2 teaspoon ground cumin
  • 1/2 teaspoon salt
  • 1/4 teaspoon ground black pepper
  • 3 tablespoons olive oil

Instructions

  1. Sauté the diced onion in 1 tablespoon of olive oil over medium heat until translucent (about 5 minutes). Add minced garlic and cook for an additional 30 seconds before removing from heat.
  2. In a large bowl, combine the sautéed onion and garlic with ground chicken, chopped spinach, breadcrumbs, Greek yogurt, dill, lemon juice, oregano, paprika, cumin, salt, and pepper. Mix until well combined.
  3. Shape the mixture into approximately eight patties (½ inch thick).
  4. Heat remaining olive oil in a skillet over medium heat and cook the patties for about 5-6 minutes on each side until golden brown and cooked through.
  5. Serve warm with garnishes like fresh herbs or lemon wedges.
