  • 2 tbsp olive oil
  • 1 onion, finely chopped
  • 3 cloves of garlic, finely chopped
  • 4 ripe tomatoes, chopped
  • 1 tsp ground cumin
  • 1 tsp paprika powder
  • ½ tsp smoked paprika powder (optional)
  • ⅓ tsp turmeric
  • 1 tbsp tomato paste
  • Dash of salt & black pepper
  • 1 can (15oz) canned white beans (Cannellini, Navy, Great Northern)
  • ¾ cup dry white beans (Cannellini, Navy, Great Northern)
  • 1 cup veggie broth
  • 1 ½2 cups veggie broth

Instructions

  1. Heat olive oil in a pot over medium heat. Sauté chopped onion until translucent (about 5 minutes).
  2. Add minced garlic and cook for 1 minute. Stir in spices (cumin, paprika, turmeric) and toast briefly.
  3. Incorporate chopped tomatoes and tomato paste; simmer for about 5 minutes.
  4. Mix in canned and dry beans along with veggie broth; stir well.
  5. Cover and simmer on the stovetop for 20 minutes or cook under pressure in an Instant Pot for 10 minutes.
  6. Adjust seasoning to taste and serve warm.
