  • 1 cup granulated sugar (divided into 1/3 cup for egg whites, 2/3 cup for the batter)

  • 3/4 cup full-fat yogurt

Instructions

  1. Preheat the oven to 325°F (160°C) and line an 8-inch springform pan with parchment paper.
  2. In separate bowls, whip egg whites until frothy; gradually add 1/3 cup sugar until stiff peaks form.
  3. In another bowl, whisk egg yolks, yogurt, vanilla/l lemon zest, cornstarch, and salt until smooth.
  4. Gently fold one-third of the whipped egg whites into the yogurt mixture, then carefully fold in the remaining whites.
  5. Pour the batter into the prepared pan and place it inside a larger baking tray filled with hot water.
  6. Bake for 50-60 minutes until golden brown; let cool in the oven with the door cracked for 15 minutes before serving.
