  • 1/2 cup unsalted butter
  • 1 cup all-purpose flour
  • 4 large eggs
  • 1 cup heavy cream
  • 1/4 cup lemon juice
  • Zest of 1 lemon
  • 1/2 cup sugar
  • 3 tablespoons cornstarch
  • 1/2 cup milk
  • Fresh raspberries for topping
  • 1/2 cup powdered sugar

Instructions

  1. Preheat oven to 400°F (200°C). In a saucepan, combine water and unsalted butter over medium heat until melted. Bring to a boil, then add flour and salt, stirring until the mixture forms a ball.
  2. Remove from heat; let cool slightly before beating in eggs one at a time until smooth.
  3. Pipe strips of dough onto a lined baking sheet. Bake for 25-30 minutes until golden brown.
  4. For the filling, whisk together heavy cream, lemon juice, zest, sugar, cornstarch, milk, egg yolks, and vanilla extract until smooth.
  5. Once cooled, poke holes in eclair shells and fill with the cream mixture. Top with fresh raspberries.
  6. Drizzle with powdered sugar mixed with lemon juice before serving.
