  • 1/4 cup butter, softened
  • 3 cups powdered sugar, sifted
  • 2 tablespoons honey
  • 1 teaspoon vanilla extract
  • 2 tablespoons peach puree (optional)

Instructions

  1. Preheat your oven to 350°F (175°C) and line a muffin tin with cupcake liners.
  2. In a bowl, whisk together flour, baking powder, and salt.
  3. In a separate bowl, cream together butter, sugar, and honey until fluffy.
  4. Beat in eggs one at a time followed by vanilla extract.
  5. Alternately mix the dry ingredients and milk into the wet mixture until combined.
  6. Gently fold in diced peaches.
  7. Fill each cupcake liner two-thirds full with batter.
  8. Bake for 18-22 minutes or until a toothpick comes out clean; cool on a wire rack.
