  • 2 tablespoons honey
  • 2 tablespoons extra virgin olive oil

  • ¼ teaspoon freshly ground black pepper

Instructions

  1. Preheat the oven to 425°F (220°C).
  2. Wash and scrub the carrots; peel if desired. Trim ends and cut into uniform pieces about 1-inch thick.
  3. In a bowl, whisk together balsamic vinegar, honey, olive oil, garlic, thyme, salt, and pepper.
  4. Toss the carrot pieces in the glaze until well coated.
  5. Spread on a baking sheet in a single layer and roast for 25-30 minutes until tender and caramelized, flipping halfway through.
