  • 1 lb lean ground beef
  • 1 packet taco seasoning
  • 1/2 cup water
  • 6 medium flour tortillas
  • 1 can refried beans (16 oz)
  • 1 can red enchilada sauce (10 oz)
  • 1 cup shredded cheddar cheese
  • 1 cup shredded pepper-jack cheese
  • 1 Roma tomato, diced
  • 1 green onion, diced
  • 1 small can sliced black olives

Instructions

  1. Preheat oven to 375°F and prepare two baking sheets with non-stick spray.
  2. Arrange three tortillas on each baking sheet and bake for 3–5 minutes until golden brown. Set aside.
  3. In a skillet over medium-high heat, cook the ground beef until browned; drain excess grease.
  4. Stir in taco seasoning and water; bring to a boil, then reduce heat and simmer for about 10 minutes.
  5. Warm refried beans in the microwave for 1–2 minutes until heated through.
  6. Spread warm beans on a tortilla, add one-third of the beef mixture, place another tortilla on top, and repeat layering.
  7. Top the last tortilla with enchilada sauce and sprinkle with cheeses, diced tomatoes, green onions, and olives.
  8. Bake for another 5 minutes or until cheese is melted and bubbly.
