  • 4 bell peppers (any color)
  • 1 Tbsp olive oil
  • 4 cups fresh spinach
  • 1 tub (15 oz) ricotta cheese
  • 1 cup shredded mozzarella cheese
  • ½ cup grated parmesan
  • ½ cup sliced green onions
  • ½ cup chopped fresh basil
  • ½ handful chopped flat-leaf parsley
  • 1 tsp each dried rosemary, dried thyme, fennel seed, and salt
  • ½ tsp pepper
  • 2 large eggs
  • ½ cup breadcrumbs
  • 1 Tbsp oil

Instructions

  1. Preheat your oven to 400°F (204°C). Halve the bell peppers, remove seeds, and brush with olive oil. Bake for about 20 minutes until slightly softened.
  2. In a bowl, microwave spinach until wilted (15-30 seconds), then mix it with ricotta, mozzarella, parmesan, green onions, herbs, eggs, and spices.
  3. Fill each pepper generously with the mixture.
  4. Combine breadcrumbs with oil and sprinkle on top of each pepper.
  5. Bake again at 350°F (176°C) for about 30 minutes or until golden brown.
