  • 4 boneless, skinless chicken breasts
  • 1 cup ricotta cheese
  • 1 cup fresh spinach, chopped
  • 1/4 cup grated Parmesan cheese
  • 2 tablespoons fresh parsley, chopped

  • Salt and pepper to taste
  • 1 cup marinara sauce
  • 1/2 cup shredded mozzarella cheese

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a bowl, combine ricotta cheese, chopped spinach, Parmesan cheese, parsley, basil, salt, and pepper.
  3. Flatten each chicken breast to about 1/2 inch thick using a meat mallet.
  4. Spoon two tablespoons of the ricotta mixture onto each chicken breast and roll tightly. Secure with toothpicks if needed.
  5. Heat olive oil in a skillet over medium heat and brown the rolls on all sides.
  6. Place browned rolls in a baking dish, cover with marinara sauce, and sprinkle mozzarella on top.
  7. Bake for 25-30 minutes until golden and bubbly.
