- 1 yellow onion (diced)
- 2 carrots (sliced into rounds)
- 3 cloves garlic (minced)
- 2 lb jackfruit pieces (rinsed well)
- 1 lb gnocchi (Italian potato dumplings)
- 1 cup fresh tomatoes (diced)
- 3/4 cup frozen green peas (thawed out and rinsed)
- 6 cups vegetable stock (low sodium)
- 1/3 cup apple vinegar
- 8 sprigs fresh thyme
- 2 bay leaves
- 1 tbsp smoked paprika
- 1/3 cup whole wheat pastry flour
- Sea salt + black pepper to taste
- 1/3 cup fresh Italian parsley (roughly chopped)
- Sauté diced onion and sliced carrots in a heavy-bottom Dutch oven over medium-low heat until translucent.
- Add minced garlic and cook until fragrant.
- Incorporate rinsed jackfruit, fresh thyme, bay leaves, and apple vinegar; simmer until most vinegar evaporates.
- Whisk together whole wheat pastry flour with vegetable stock; pour into the pot and stir in smoked paprika and whole cloves.
- Cook for about 45 minutes until jackfruit is fork-tender.
- Stir in gnocchi, diced tomatoes, and green peas; cook until gnocchi float to the top.
- Season with sea salt and black pepper to taste; garnish with freshly chopped parsley before serving.
