  • 1 yellow onion (diced)
  • 2 carrots (sliced into rounds)
  • 3 cloves garlic (minced)
  • 2 lb jackfruit pieces (rinsed well)
  • 1 lb gnocchi (Italian potato dumplings)
  • 1 cup fresh tomatoes (diced)
  • 3/4 cup frozen green peas (thawed out and rinsed)
  • 6 cups vegetable stock (low sodium)
  • 1/3 cup apple vinegar
  • 8 sprigs fresh thyme
  • 2 bay leaves
  • 1 tbsp smoked paprika
  • 1/3 cup whole wheat pastry flour
  • Sea salt + black pepper to taste
  • 1/3 cup fresh Italian parsley (roughly chopped)

Instructions

  1. Sauté diced onion and sliced carrots in a heavy-bottom Dutch oven over medium-low heat until translucent.
  2. Add minced garlic and cook until fragrant.
  3. Incorporate rinsed jackfruit, fresh thyme, bay leaves, and apple vinegar; simmer until most vinegar evaporates.
  4. Whisk together whole wheat pastry flour with vegetable stock; pour into the pot and stir in smoked paprika and whole cloves.
  5. Cook for about 45 minutes until jackfruit is fork-tender.
  6. Stir in gnocchi, diced tomatoes, and green peas; cook until gnocchi float to the top.
  7. Season with sea salt and black pepper to taste; garnish with freshly chopped parsley before serving.
