  • 2/3 cup maple syrup or honey
  • 1/4 cup Greek yogurt (plain or vanilla)
  • 1/4 cup vegetable oil
  • 1 egg
  • 1 2/3 cups whole wheat flour
  • 1 teaspoon ground cinnamon
  • 1/4 teaspoon ground nutmeg
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon salt

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a large bowl, mix pumpkin puree, maple syrup or honey, Greek yogurt, vegetable oil, egg, and vanilla essence until smooth.
  3. In another bowl, whisk together whole wheat flour, cinnamon, nutmeg, baking soda, baking powder, and salt.
  4. Gradually combine the dry ingredients with the wet ingredients; stir gently until just mixed.
  5. Fill muffin tins two-thirds full with batter and bake for about 18 minutes or until a toothpick comes out clean.
