  • 1/4 cup melted coconut oil
  • 1/4 cup maple syrup
  • 1/2 cup coconut sugar
  • 2 teaspoons vanilla extract (optional but recommended)
  • 2 eggs (at room temperature)
  • 1 1/2 cups chopped pecans (raw and unsalted)

Instructions

  1. Preheat your oven to 350°F (175°C) and line a 9×9-inch baking pan with parchment paper.
  2. In a bowl, mix almond flour, melted coconut oil, and maple syrup to form a smooth dough. Press into the prepared pan and bake for 10 minutes until lightly golden.
  3. In another bowl, whisk together coconut sugar, melted coconut oil, maple syrup, vanilla extract (if using), and eggs until well combined. Stir in chopped pecans.
  4. Pour the pecan filling over the pre-baked crust and return to the oven for 20-25 minutes until set.
  5. Allow to cool for at least 30 minutes, then refrigerate for one hour before cutting into squares.
